This coffee comes from a co-op of 359 coffee producers in a small area that have joined together as the Comunidades Indigenas de la Region de Simojovel de Allende. We note classic Chiapas characteristics including unusually high sweetness and chocolate and citrus flavors. Works well as a medium or dark roast.
